Winter is here, which means we are having less daylight, cold days but still busy schedules. During these winter months, I find it even harder to make a nice meal for my kids because I feel like we need to eat earlier than usual, which leaves me with even less time between school and dinner time! With these busy days, I look for ways to make meal time even easier. One meal that my whole family loves, especially in the winter, is soup. I’d eat soup everyday if I could- but making it from scratch is very time consuming. This is why I was SO excited when I discovered new Idahoan Steakhouse® Soups. These delicious soups are a great simple winter meal idea for your busy family!

Idahoan Steakhouse® Soups are available in a variety of delicious flavors, including: Loaded Potato, Creamy Potato, Cheddar Broccoli, and Cheddar Potato. Each variety takes literally just minutes to make and are hearty, flavorful and so filling. My kids love the loaded potato and cheddar broccoli the best. Each soup is made with real Idaho® potatoes with flavorful seasonings and rich cheeses to provide a creamy, hearty taste in every spoonful – all you have to do is add water!
To balance our soup out, I like to pair it with a simple spinach salad with my favorite homemade cranberry vinaigrette. It’s easy to make, lasts for weeks in the fridge and adds a colorful punch to your salad. By adding a quick side salad to your winter soup meal, you add in some extra healthy greens, vitamins and minerals that make your meal perfect for any busy night.
- 3 T red wine vinegar
- ⅓ cup olive oil
- ¼ cup fresh cranberries
- 1 T dijon mustard
- ½ t. minced garlic
- 2 T water
- 1 t honey
- salt and pepper to taste
- Combine all ingredients into a small blender, puree until smooth. Refrigerate until ready to use.
One other soup staple is some delicious bread! With this creamy Idahoan Steakhouse® Soups , I love to make some of my super simple cornbread bites. The buttery taste goes perfectly with the taste of the soup and they are so easy to make too. Made with just a few ingredients, one batch makes about 24 mini-muffins so it’s perfect for dinner with plenty of leftovers for snacks the next day. Make them on the weekend and enjoy them all week!
Mini-Cornbread Bites
1/4 c. vegetable oil
- Preheat oven to 375 degrees F. Lightly grease a 12-cup mini-muffin tin or coat with cooking spray. Whisk together flour, cornmeal, sugar, baking powder, baking soda, and salt.
- Combine buttermilk, egg, and oil. Stir buttermilk mixture into flour mixture until combined.
- Fill cups of muffin tin three-quarters full of batter. Bake until tops are golden and a toothpick inserted into centers comes out clean, about 12 minutes.
Pretty simple, right?
