Summer is in full swing, and what screams summer more than a colorful cocktail with your friends? I love trying new and fun drinks, especially ones that are a little bubbly. The other evening I was craving something fruity and just knew what I’d make. These pineapple Prosecco mimosas are the perfect drink for a nice brunch or a warm summer evening. Made with just a few ingredients, they come together in a snap and will be a huge hit at your next summer get together!
Ready to be Italian for summer? My pineapple mimosas star one of the best Proseccos on the market: Riondo Prosecco. Spago Nero is Riondo’s original authentic Prosecco that makes any occasion a little more Italian, a bit more bubbly, and a lot more fun! This refreshing splash of bubbles is the perfect vino frizzante that can be sipped on a terrace, raised in a glass to toast your friends and even combined with fresh juices or garnishes.
This vino frizzante boasts fresh aromas of Golden Delicious apples, pears, and acacia blossoms. Its persistent effervescence is followed by a crisp, clean finish leaving a delicate and fruity taste on the palate. This Prosecco is the perfect choice to either sip by itself or mix to make a bubbly cocktail.
The fruity nature of this Prosecco pairs perfectly with the two fruit juices in this cocktail: pineapple and orange! Served with a garnish of pineapple and a sprig of rosemary and it suddenly becomes a more “upscale” drink that will certainly impress your friends!
To make this cocktail, you’ll combine orange and pineapple juice in whatever glass you choose and top it with some Riondo Prosecco and then add the garnish- and that’s all! This drink is great for any party, get together or when you are just craving something sweet and bubbly after a long day.
- 2 cups fresh pineapple juice

- Pour pineapple-orange mixture into glasses until half full and then fill glasses with Prosecco.

Riondo is my go-to beverage of the summer. It’s truly perfect for enjoying at home after work or with friends on the patio. It’s a great base for any cocktail and a nice change up from a heavy cocktail or glass of wine! I love how it’s an authentic Italian import too, it just makes me feel fancy.
