Every since Lent has gotten over, I have been more and more snacky- a little something here, a little something there, no matter how small, it all starts to add up calorie wise. I have been reading about these no bake energy bites a lot lately so I decided to take what I read and transform them into my own- by adding in some good old fashioned PB & J taste! These bites take just a few minutes to whip up and are perfect for eating pre-workout, post-workout or anytime you feel like you want a treat!
Here’s what you’ll need to make these yummy no-bake bites:
1 1/2 c old fashioned oats
2/3 unsweetened coconut
1/2 c ground flaxseed
1 T chia seeds
1/2 c natural peanut butter
6 T jam (I used an organic triple berry jam)
1/3 c honey
1 1/2 t pure vanilla extract
3/4 c dried cherries
Mix together all of the ingredients, except the cherries (by hand of that’s easier for you). Once combined, add in the cherries and refrigerate for around 30 minutes to make them easier to work with.
Roll them into balls and place on wax paper. I refrigerated them again for a bit. This recipe makes between 24-28 balls.
These bites are super yummy and have a nice peanut-buttery taste- even my kids liked them! Well, two of the three, but that’s a win in my book.
With the list of wholesome ingredients, these are definitely a guilt-free snack! They will help keep you feeling full and give you lots of natural energy for the road ahead.
These bites can be held in the fridge or even frozen. They are really super yummy.

- Mix together all of the ingredients, besides the cherries, until well combined.
- Add in the cherries and let the mix set for around 30 minutes in the fridge.
- Form the mix into balls and store in a container in the fridge until ready to be eaten.
