Spring has finally arrived, and while we still have snow on the ground here in the Northeast, that doesn’t mean we have to miss out on all that spring has to offer! When spring comes, I get excited for the warmer weather and the thought of working in the garden and flower beds outside. I get excited for get togethers with friends and sharing delicious food and drinks out on the patio. When I think of spring, I think of smaller meals that are as far away from those heavy winter ones we have been consuming for months! My recent warm and fuzzy thoughts of spring lead me to be in the mood for something with a mediterranean feel to it, and so these Mediterranean RITZ Cracker Bites were born! They combine the taste of delicious RITZ Crackers with the light flavors of the Mediterranean- all in one little bite-sized treat.
We have neighborhood get togethers all of the time, and I am always looking for something new and different to bring. One of these recent events led me to brainstorm what I could pile on some RITZ Crackers to make a yummy mini app that everyone would love! These little Mediterranean RITZ Cracker Bites are topped with just a few ingredients and so easy to assemble. They are perfect for a party, a pre-meal snack or just an evening treat!
The base of these yummy bites are a delicious RITZ Cracker. We always have RITZ in our house. They are my kids #1 favorite snack and love them with some cheese or turkey in place of a sandwich at school. Since we had so many, they were the perfect option for creating my bites for our get together we were having. Even better, was the fact that I can grab them at my local Target and even save money with my Cartwheel app!
To make these little spring bites, you only need a few ingredients: pesto, sliced mozzarella cheese, kalamata olives, roasted tomatoes, dill, parsley and a little drizzle of fresh olive oil and balsamic. I like to visit my olive bar at my store to get the majority of these ingredients. I can just the right amount and they are extra fresh tasting. I used store bought pesto too, and it tasted amazing, but you could always make your own.
To assemble each bite, just layer your ingredients on top of your RITZ: pesto first, followed by the cheese, olive, tomato and drizzled with the olive oil and balsamic. You could even add a slice of pepperoni or prosciutto for some additional flavors!
What really makes these little bites stand out is the addition to some fresh herbs. Nothing says spring like using fresh ingredients from the garden- but with snow still on the ground, what’s a chef to do? If you live in a place with seasonal weather changes, consider having a little window sill garden! They are easy to maintain and can grow any herbs you wish. Currently in mine I have parsley, dill and sweet mint, but I plan on adding in basil and rosemary in a second pot once it’s available around here. All you have to do is water it every few days and you will have a fresh supply of herbs for all of your recipes!
A little chopped dill and parsley on each of these Mediterranean RITZ bites and you are good to go. Bring this dish to any party and you will be the hit of the event with everyone asking for your recipe- and they will be surprised at how simple they were to put together!
