Hello! I am Alesha from Lifeology. I write about the things I love, do and create. I am wife to Andrew, a firefighter, and momma to Charlotte, the sweetest six month old! Today I’d like to share with you a fresh, easy summer salad recipe:
What you will need for the salad:
1 can of corn, drained
1 can of black beans, rinsed
1-2 chicken breasts
Salt & pepper
Chop tomato and avocado. Cook chicken and season with a small amount of taco seasoning, salt and pepper. Chop chicken and mix all ingredients together.
What you will need for the dressing:
I found this recipe via The Girl Who Ate Everything and tweaked it a bit so it was healthier!
1 pkg ranch dressing mix
1 cup buttermilk
1 cup greek yogurt
1 clove garlic, minced
1/2 bunch cilantro, chopped
1/2 tsp lime juice
1/2 to 1 small jalapeno seeds removed
Blend all ingredients together in a blender or food processor. Pour over salad and enjoy!
