Last week I shared my recipe for black bean quinoa salad and I promised I was going to try more varieties of this classic summer dish, and I am here to deliver! This time, I decided to go mediterranean and make some green quinoa salad and boy am I glad that I did! This version is just as delicious as the last one and also would make the perfect side to any summer meal, and honestly stands on its own as a meal too. The classic flavors of feta, kalamata olives and red wine vinegar shine in this dish and the secret stash of kale in it makes it pretty healthy too.
This greek quinoa salad is made with some traditional greek ingredients: cucumber, red onion, olives, feta and tomato but I added in some kale for some green power. The dressing is pretty simple and only has a few ingredients too. I found the flavors to be better after they sat together for a bit before you tossed the salad in them.
I added in some red pepper flake for a bit of spice and also some fresh parsley and oregano. I have a bunch in my herb basket but I assume using dried would just be as good!
I like kale much better when it’s tossed in something, it’s not as rough as raw is, so if you are bringing this someplace, have it sit in the fridge for a bit before you go so the kale can soak up the dressing and soften up! I used kalamata olives in this dish that I got from the olive bar at my local grocery store so they were packed with greek flavors already and I didn’t have to do anything to them. This salad was so easy to make and has some pretty great flavors, I have been eating it for days!!
- 1 cup quinoa (prepared with chicken stock)
- 1 medium cucumber, peeled and diced
- 1 cup red onion, chopped
- 1 cups kale, chopped
- 1 cup cherry tomatoes, halved
- 1 cup kalamata olives
- ½ cup feta
- ¼ cup olive oil
- ¼ cup red wine vinegar
- ½ teaspoon oregano
- 1 tablespoon parsley
- 1 tablespoon dried dill
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ teaspoon
- 1 tablespoon honey
- 1 tablespoon lemon juice
- Combine all dressing ingredients and set aside.
- Prepare quinoa according to package directions, I used chicken stock or added flavor.
- Mix quinoa together with other salad ingredients and toss with the dressing.
- Serve warm or chilled.
