Black Bean Quinoa Salad

A super easy and fresh side for any meal!
  • Salad:
  • 1 cup quinoa, prepared to package directions
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 can black beans, rinsed
  • ½ cup corn
  • 1 peach, diced
  • 1 cup spinach, chopped
  • ½ small onion, diced
  • Orange Vinaigrette:
  • ¼ cup orange juice
  • ¼ cup apple cider vinegar
  • ¼ cup olive oil
  • 1 Tablespoon sugar
  • 2 teaspoons red pepper flakes
  1. Prepare the vinaigrette by mixing the vinaigrette ingredients in a small bowl and set aside.
  2. Cook quinoa according to package directions, I like to use one cup water and one cup chicken stock to make mine.
  3. Combine chopped veggies and peach in a large bowl, add in rinsed beans and quinoa when it's cooked. Toss with the vinaigrette and serve either warm or chilled after being in the fridge for awhile.
