Mini Blue Cheese Wedge Salads

A simple to make mini salad with BIG flavor
  • salad:
  • iceberg lettuce
  • chopped tomatoes
  • diced red onion
  • crumbled blue cheese
  • ranch dressing
  • balsamic drizzle:
  • ¼ cup balsamic vinegar
  • 2 tablespoon honey
  • ¼ teaspoon sea salt
  1. Fry up your bacon and let cool, chop into small pieces.
  2. To make the balsamic drizzle, combine the three ingredients in a small sauce pan and bring to a boil, reduce heat and let simmer for 5-8 minutes while it reduces. Once reduced, let cool before serving.
  3. Cut your iceberg lettuce into mini wedges. Layer with chopped tomatoes, diced onions, blue cheese and chopped bacon. Add your ranch and drizzle with some balsamic dressing. Serve right away.
