Creating the Ultimate Soccer Sideline Kit

A simple and healthy muffin recipe, perfect for any day!
  • ⅔ c brown sugar
  • 1 egg
  • 6 T melted butter
  • 1 t vanilla extract
  • 2 ripe bananas
  • 1½ c flour
  • ¾ t baking soda
  • ¼ t salt
  • ½ t cinnamon
  • 1 c diced strawberries
  1. Spray a muffin tin with nonstick spray or line with cupcake liners. Preheat oven to 350 degrees.
  2. Cream together the brown sugar and egg in a bowl of a stand mixer.
  3. Add in the chopped banana and vanilla and mix until it's blended slightly (it's ok to leave some pieces of banana)
  4. In a separate bowl, combine the flour, baking soda, salt and cinnamon.
  5. Add it into the egg mixture and blend well, slowly pouring in the melted butter to soften it.
  6. Stir in the strawberries by hand and scoop into the muffin tin, baking for 20-25 minutes until they bake up golden brown.
