Banana Carrot Cake Muffins

A delicious and healthier muffin, perfect for an afternoon snack or even a breakfast treat!
  • 5 T unsalted butter, room temperature
  • ¾ c. packed brown sugar
  • 1 egg
  • 1 c shredded carrots
  • 1 c. smashed banana puree
  • ½ c. plain greek yogurt
  • 1½ c flour
  • 1 t vanilla extract
  • 1 t baking soda
  • 1½ t cinnamon
  • ¼ t nutmeg
  • ¼ t salt
  1. Preheat the oven to 350 degrees. Line your cupcake tray with liners or spray with non stick spray.
  2. Cream the room temperature butter and sugar until smooth, add in the egg.
  3. In the same bowl, add in the carrot, banana, vanilla extract and yogurt and stir.
  4. In a separate small bowl, mix together the flour and spices and stir. Add the dry ingredients into the wet ones slowly, stirring to combine.
  5. Pour the batter into the cupcake liners and top with a bit of brown sugar for a yummy crunch on top.
  6. Bake for 22 minutes. Makes 16 muffins.
