Do your kids love the minions as much as mine do? My kids love all of the movies that star the minions, so, of course we saw the new Minions movie right when it came out this summer. It was so funny and perfect for my kid’s ages. We all laughed at all of the crazy mischief the minions got into when looking for a new boss to serve. We already owned Despicable Me and Despicable Me 2 so when the new Minions © 2015 Universal Studios, All rights reserved, was being released, you bet we were going to add it our collection! Since my favorite store Target, was releasing a special Blu-Ray/DVD combo pack in a special metal tin collectors tin that you could ONLY get there with a whole disc of a bunch of extra fun party extras (also an awesome Target exclusive!) – I figured we could have a Minions Movie Night to celebrate- and what’s best to eat in your pjs than pancakes!? So these adorably easy minions pancakes were born!
If you’re anything like me, then you’ve probably seen these “shaped” pancakes and thought “nope, there is no way I can make those!” I know I sure did- so I was even more shocked at seriously how EASY these minion pancakes were to make. The only special tool it required was a squeeze bottle for the pancake batter and in just a few minutes, your kids can be eating these super cute minion pancakes for breakfast (or dinner!)
To make these pancakes, I just tweaked my basic pancake batter recipe slightly by adding a speck more milk so it was a little thinner. Here’s my recipe:
1 cup Market Pantry flour
2 tablespoons sugar
2 teaspoons baking powder
a pinch of salt
1/2 teaspoons vanilla
2 tablespoons melted butter
1 1/4 cups milk
blueberries or chocolate chips for the eyes
After you combine all of your ingredients in a bowl, pour the batter into your squeeze bottle. I poured it into a large measuring cup first so it was easier to pour. Turn up the heat on your griddle or griddle pan to a medium high heat and spray it with a non stick spray so the pancakes don’t stick. To make the minion face, first make the outline of the faces eyes, hair and a simple mouth, then place a blueberry or a few chocolate chips for the eyes and cover with a bit more batter. Wait around 30 seconds for that part to start to show bubbles on it, and then fill in the rest of the batter. Then wait a few more seconds for the whole pancake to start to show bubbles and then flip it! If you don’t let the outline sit long enough or the pan isn’t hot enough, then the face will all be the same color and you won’t really be able to tell it’s a minion (see the first picture in the bottom row), but if you wait just a few more seconds before you fill it in, then when you flip it, the outline and goggles with be slightly darker, showing the face easily.
The blueberries make much better eyes, but my kids love chocolate chips, so I did some of both. We made minions with one eye and some with two, and the more I made (and the hotter the pan was) the easier and quicker they were to make. They really were so much easier to make then they seem and the kids even ate them all up so fast they forgot to ask for syrup!
One of my favorite brands for food is Target’s Market Pantry brand, since it’s cheaper than the others and often there’s an extra 5% savings on the Cartwheel app- so when I was out picking up the new Minions movie, I was sure to grab some Market Pantry brand flour and chocolate chips for my recipe. Illumination Entertainment’s Minions movies were in a fun display right up front so I quickly grabbed the special metal collectors tin only available at Target, since it came with 40 minutes of bonus party features, AND you got a $5 gift card for next time- score!! I’m literally at Target (at least) once a week, so that gift card will be put to use asap. You can even purchase it online! Target is my one stop shop for all of my movie night needs, from the movie itself to all my pancake ingredients, and even some popcorn for movie time munching.

This is a great find for any kid that make want to have a minions themed birthday party or sleepover, and it’s even fun for just a weekend afternoon!
