This week I wanted to make some chocolate chip cookies and didn’t have quite enough chocolate chips and also had this box of vanilla pudding I had been meaning to use….so I decided to make a mixed-up cookie, as my kids named it!
These cookies are pretty much no-fail. They are soft and delicious.
Ingredients:
1 c. unsalted butter (room temp)
3/4 c brown sugar
1/4 c. granulated sugar
3.4 oz box of vanilla instant pudding
1 t. vanilla extract
2 eggs
2 1/4 c. all purpose flour
1/2 t. salt
1 1/2 t. baking soda
1 c. chocolate chips
1/2 c. butterscotch chips (can substitute any kind you want!)
– Preheat the oven to 350 degrees, line a baking sheet with parchment paper
– In the bowl of a stand mixer, cream sugars and butter together until well mixed. Add in the vanilla, pudding and the eggs, one at a time, until mixed.
– In a small bowl, whisk flour, baking soda and salt. Add the dry ingredients to the sugar mix and mix till combined.
– Stir in the chips and use a cookie scooper to scoop dough onto the baking sheet.
– Bake for 13-15 minutes, let cool on a wire rack.

“Mixed up” recipes are always the best! 🙂 Your cookies sound really good! I keep seeing recipes for cookies with pudding in them, I really need to try it too!
