Fall is a busy time of year for us, between school, soccer, cub scouts, and CCD requirements, we are always one place or another, but that doesn’t mean I don’t want to serve my kids a wholesome meal, including their veggies! I just have to choose things that require little prep and are quick to cook. I often like to make pastas for my kids, since they can incorporate many things into one meal and are fun to eat. This Bacon Ranch Pasta is one of my families favorites, combining my kids love of ranch and my husband’s love of bacon all in one meal- and by serving them with a bag of quick and easy Bird’s Eye Steamfresh veggies, we have a balanced meal that is not only yummy but fast too!
I have always been a big fan of Bird’s Eye Steamfresh veggies since they are packed full of vitamins and nutrients and so easy to make! There’s no cutting, washing or prepping- just pop them in the microwave and you’ll have fresh steamed veggies in a matter of minutes. My kids usually give me trouble eating in general (except dessert, of course!) so I was thrilled to see the new line of Flavor Full Steamfresh veggies! They have all sorts of flavors, but I had to grab the Buffalo Cauliflower and Ranch Broccoli. These are flavors my whole family loves and go so well with the meals we usually eat.
Obviously the Ranch Broccoli went fantastic with this Bacon Ranch Pasta and was a great side to complete our busy weeknight meal. The bold flavors of the broccoli made my kids eat it up in no time too. This pasta only takes a few ingredients and is really versatile, so it’s great for trying to use up some things that may be going bad soon!
The base of the pasta is bacon, onion and red pepper and it’s sautéed for a few minutes all together. The flavors and smells are really amazing!
The base is combined with whatever pasta you have on hand (I used bowtie) and this super simple, creamy sauce. The sauce is made from a little butter, chicken stock, milk, some spices, parmesan cheese and two tablespoons of ranch. You could easily use the seasoning packet instead of the dressing like I did and it would turn out great.
All together, start to finish, this Bacon Ranch Pasta took less than 20 minutes and was so filling and tasty. All of my kids ate it up- and that’s saying a lot! Served with a side of yummy Ranch Broccoli from Bird’s Eye, and you can call this dish complete.
- 2 cups bowtie pasta
- 3 slices bacon, chopped
- ½ reg bell pepper, chopped
- ¼ onion, chopped
- ½ cup chicken stock
- 2 tablespoons butter
- ¼ cup milk
- ¼ cup parmesan cheese
- 2 tablespoons ranch dressing
- 1 tablespoon dried parsley
- 1 tablespoon flour, to thicken
- salt and pepper to taste
- Cook pasta according to package directions.
- Combine chopped bacon, onion and pepper and sauté for 5-6 minutes until bacon is cooked and onion is soft.
- Once cooked, remove and set aside. In the same pan, add butter and once melted, add chicken stock, milk, ranch, and spices and cook for 2-3 minutes.
- Sprinkle flour on top and whisk until thickened, add in parmesan cheese and cook 1 more minute.
- Combine pasta, veggies and sauce and serve right away.
