Are your kids ALWAYS asking you for a dessert? Yea, mine too. I am constantly looking for a healthier treat for my kids when they are craving something sweet. These muffins are perfect for that. Made with natural applesauce, banana and whole wheat flour, they are a healthy alternative to pre-packed treats, but the mini chocolate chips scream “dessert” to the kids! They are the perfect size for lunch boxes and fill that “I want something sweet, mama!” request when packing lunches. They also have a cute name to boot! 🙂
ABC muffns (apple banana chocolate chip)
Ingredients:
1 1/2 c. whole wheat flour
2/3 c. brown sugar
1 1/2 t. baking sugar
1/4 t. salt
1 egg
1 1/2 t. vanilla extract
1 lg. ripe banana, mashed
1/2 c. natural applesauce
1/2 c. unsalted butter, room temp.
1/4 c. milk
3/4 c. mini chocolate chips
– Preheat the oven to 350 degrees.
– Cream the butter and sugar together in the bowl of a stand mixer. Add in the applesauce, banana and vanilla extract.
– Add the salt and baking soda to the mix. Level the flour and add it to the mix, alternating with adding the milk until both are completely combined. Stir in the chocolate chips at the end.
– Spray a mini muffin tin with non0stick spray or line with mini muffin wrappers. Fill each 3/4 the way full. Bake for 20 minutes. Let cool and then remove from the pan.
